Germanic Apple Cheesecake & Blueberry Cheese Cupcakes

Welcome again to my home made recipe~

This time I will present 2types of cheese cake for you guys..


** Germanic Apple Cheesecake **
( Cost:RM30+)

Base:-
160g crushed digestive biscuits, 80g melted butter


Filling:-
1tbsp butter, 2tbsp brown sugar, 200g green apple flesh (diced), 20g raisins


Cheese filling:-
400g cream cheese, 125g Camembert cheese, 80g brown sugar, 3eggs, 100ml milk, 2tbsp cornstarch


Method:


1. To make base, stir all ingredients until combined. Press mixture into base of square cake tin.


2. To make filling, heat up wok, melt butter, add brown sugar, green apples and raisins. stir fry until apples are tender. Dish up keep aside.


3. To make cheese filling, beat cream cheese and brown sugar until smooth. Beat in Camembert cheese until blended.


4. Add in eggs, one at a time. Beating well after each addition. Then stir in milk and cornstarch until blended.


5. Place cooked apples into prepared tin. Pour in cheese filling. Bake in preheated oven at 170degree for 40-45minutes.


6. Remove from oven and leave to cool. Chill in fridge.

~ Blueberry Cheese Cupcakes ~
( Cost:RM30+)



Ingredients:-


Base:
3pieces digestive biscuits, crushed into crumbs
50g chopped almond, toasted


Cream cheese Mixture:
A:-
250g cream cheese, 3eggs yolks, 100ml milk, 20g plain flour


B:-
3egg whites, 30g caster sugar


C:-
3tbsp blueberry jam


Method:-


1. Preheat oven to 180degree.


2. Base: Put biscuits crumbs and chopped almond into paper cups.


3. Cream Cheese Mixture: Beat cream cheese and egg yolk until smooth. Add in milk, plain flour and stir well.


4. Whisk egg whites with caster sugar in a clean mixing bowl until soft peak is formed.


5. Mix whisked egg white into cream cheese mixture in 3batches. Reserve 5tbsp of mixture and mix blueberry jam.


6. Spoon the remaining of mixture into paper cups and follow with blueberry mixture. Swirl through with spoon for marble effect.


7. Bake in the preheated oven at 180degree for 25minutes.
